Pesto Pasta Salad

Whether you're putting together a summer picnic menu or prepping a healthy family meal, this pesto pasta salad will not disappoint! It's filling enough to serve as a main course or feed to a larger group as a delicious side. 

 

Ingredients

16 oz Gemelli pasta cooked according to package instructions
7 ounce jar Basil Pesto
1/2 cup Light Mayonnaise
1 teaspoon sea salt
1 1/2 cups frozen peas cooked according to package instructions
2 cups steamed or grilled asparagus; chopped
1 1/2 cups chickpeas drained 
3/4 cup pine nuts
1 tablespoon fresh chopped chives
Parmesan cheese as desired


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. While pasta is cooking, combine the pesto and mayo in a small bowl until blended.
  3. Steam the peas according to package instructions and prepare the asparagus (whether steaming or grilling)
  4. With all ingredients prepared, combine in a large bowl and stir to toss.
  5. Garnish with fresh chives and parmesan cheese as desired.
