Individual Frozen Key Lime Pies
Serves 12
A no-bake delicious frozen treat that’s a cross between traditional key lime pie and cheesecake! Let it sit 10 minutes to thaw slightly before serving. While Key Limes have that exceptional sweeter citrus taste, your ordinary lime will do just fine!
Ingredients
Crust
- 12 graham cracker squares, finely crushed, should yield ¾ cup
- 2 tablespoons granulated sugar
- ¼ butter melted
Filling
- 3 to 4 limes
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 2/3 cup evaporated milk
- Sweetened whipped cream for garnish
Instructions
Crust
- Combine crushed graham crackers and sugar in a medium bowl, add melted butter and stir until well combined and mixture sticks together.
- Line a muffin tin with cupcake liners, distribute graham cracker mixture evenly between 12 liners about 1 tablespoon each. Gently press mixture into bottom of muffin liner. Set aside while you prepare filling.
Filling
- Zest and juice limes, you should have ½ cup lime juice. Set zest aside.
- In a large bowl beat cream cheese until smooth and creamy. Add lime juice, powdered sugar and evaporated milk, beat until smooth. Stir in lime zest, reserving a bit for garnish if desired.
- Spoon filling into prepared crusts, about ¼ cup per liner, spread evenly, filling to the top of the liner. Freeze for 5 hours until firm.
- To serve, remove from freezer and let sit 5 minutes. Remove from muffin tin and remove cupcake liner and place on plate. Let sit additional 10 minutes to slightly soften. To serve, top with whipped cream and sprinkle of lime zest.
S’more Ice Cream Sandwich
S’mores, are those classic campfire treats you always want “some more” of. These quick and easy to make ice cream confections have all the gooey marshmallow chocolatey goodness you love but in a frozen version. Make up a bunch and keep them handy in the freezer.
Ingredients
- Graham Crackers
- Marshmallow Cream
- A rich chocolate Ice cream
Instructions
- Let ice cream sit while you prepare graham crackers.
- Break graham crackers into squares. Spread generous smear of marshmallow cream on each of the graham cracker squares. Scoop a generous portion of ice cream on one of the prepared graham crackers. Top with another prepared graham cracker. Gently squish together and wrap tightly in plastic wrap, place in freezer until ready to eat.
